Restaurant Inspections: 66, or U, for Cartersville Restaurant

The Bartow County Environmental Health Department conducted food service inspections Oct. 14-21 at the following establishments:

• PIC did not indicate demonstration of knowledge to adequately maintain critical conditions within the food service operations.
• Observed personal drink stored on a shelf above the food prep cooler unit. Discussed with PIC to relocate drinks away from all food and clean dish areas.
• Observed lettuce being washed in a dirty three compartment sink and sitting in the open, chemical sanitizing dish washer... Discussed at length with the PIC to use a food prep sink to wash fresh produce, vegetables.
• Observed chopped ham on prep cooler at 49F and sausage at 46F. Cooler should maintain foods at 41F or below. Cooler unit may need to be serviced to ensure it holds foods at 41F or below at all times.
• Observed garlic and oil mixture sitting on top of the prep unit with no time labeling. Garlic and oil must be maintained at 41F or below or use “time as a control.”
• Observed prep cooler reading 49 degrees. Cooler was not even plugged in and ice was being used to try and maintain proper temperature. This unit cannot be used until it is working properly. All foods will be discarded.
• Observed lasagna sitting out at 109F (not on a heat source).
• Observed sanitizer bottle not labeled with contents.
• A follow-up inspection will be held Oct. 29.
