• Observed raw animal foods not properly separated from each other in holding unit/during preparation. Chicken was placed above beef. PIC was notified of the issue and re-stacked shelves to put chicken in proper place.
• Chlorine sanitizer not at proper minimum strength for sanitizing bucket solution. PIC was notified and the minimum strength for the concentration was corrected.
• Observed potentially hazardous food -- sour cream, guacamole and tomatoes -- cold held at greater than 41 degrees Fahrenheit. PIC was notified, and voiced that the food would be thrown out.
• Potentially hazardous food held under time as a public health control without time marking indicating 4-hour limit.
• Observed no signage in restroom indicating that employees must wash hands before returning to work. PIC was notified and voiced that signage would be posted by next inspection.

• Observed raw animal foods not properly separated from each other in holding unit/during preparation. Observed food not being separated in walking fridge. Also observed raw chicken sitting on top of raw beef. PIC was notified and corrected the issue.
• Observed packages/bags of rice, flour, and masa meal open exposing the contents to contamination. PIC was notified and voiced that they would get containers for the items.
• Establishment using a sanitizer solution that does not meet the requirements specified in 21 CFR 178.1010. Observed a bottle of Fabuloso being used as sanitizer. PIC was notified and told that an ammonia or chlorine solution would be the proper chemical to use in a sanitizing solution. PIC then voiced that the issue would be corrected.
