• Observed soil buildup inside ice bin and build up on slicer. CA: Notified PIC about cleaning frequency. Corrected On-Site.
• Observed encrusted, soiled material on slicer. CA: Notified PIC about cleaning frequency.
• Observed old labels stuck to food containers after cleaning. CA: Notified PIC about cleaning frequency.
• Observed establishment utilizing time as a public health control without having written procedures. CA: Discussed with PIC about being consistent with keeping a time/temp food log for all items.
• Observed no consistent date marking procedure. Some items were date marked and some were not. Discussed with PIC about date marking all items.
• Observed cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures. CA: Food was discarded and PIC was advised to not use unit until it was fixed. Corrected On-Site.
• A follow-up inspection will be held April 13.
