• Observed employee eating in a food preparation or other restricted area. CA: Pic cleaned re sanitized prep area and then moved meal out of kitchen.
• Potentially hazardous food (chicken broth) not held at 135 degrees Fahrenheit or above. CA: Food was discarded.
• Observed in-use utensil (spoon used to scoop rice) stored in unclean water at or above 135 degrees Fahrenheit. CA: Water discarded, rice discarded, and advised PIC to use small crock pot to store spoon in water over 135 degrees Fahrenheit.

• Observed TCS foods on buffet table (lettuce, cheese, cooked eggs, melons, etc.) not held at 41°F or below. CA : PIC placed items on TPHC plan.
• Observed sanitizer bucket stored above onions and potatoes. Also observed sanitizer bucket stored in vegetable prep sink. CA: Buckets were moved to appropriate locations to prevent contamination.
• A follow-up inspection was scheduled, but no date was provided.

• Observed chlorine sanitizing solution exceeding the maximum concentration allowed. CA: Discussed with PIC and the sanitizing solution was changed out with a solution with the proper concentration.
