The Bartow County Environmental Health Department conducted food service inspections April 18-25 at the following establishments:

CITY CELLAR & LOFT, THE (Food Service Inspections)*

View inspections: April 19, 2018 Score: 83, Grade: B

  • Active managerial control measures are not satisfactory for establishment to be in compliance with code. CA: Persons in charge, managers or CFSM must be properly trained or retrained.
  • Observed employee washing hands in prep sink. CA: Discussed with PIC about using designated sink, suggested labeling.
  • Observed employee cutting strawberries and touching them with bare hands. CA: Educated employee on glove use, strawberries were discarded.
  • Observed employee eating in the main kitchen area. CA: Informed PIC that food must be eaten in a designated area.
  • Remarks: Provided forms for the employee health policy. Discussed adding more light in the walk-in cooler and dry storage area.

  • Observed TCS foods not held at 41°F or below (guacamole: 49°F, shredded cheese: 49°F, sour cream: 55°F, guacamole: 55F, chipotle ranch sauce: 47°F, southwest vinaigrette: 48F). Sour cream was placed inside walk-in cooler to cool back down to 41°F since it had been out of temperature for less than four hours. All other food items were discarded since they were held out of temperature for more than four hours.
  • Observed sanitizer buckets stored against cooking oil on bottom of prep table. CA: PIC moved cooking oil to another location, away from sanitizer buckets. Also observed unlabeled spray bottle in chemical storage area. CA: Instructed PIC to discard or label spray bottle.

  • Observed chicken partially cooked sitting on a pan next to fryers to be recooked up to at least 165 F as needed. No documentation for using time as a control. Chicken was cooked about an hour previously but was at 90 F. Discussed with PIC and chicken was immediately reheated to above 165 and labeled properly with the temperature and time removed from heat to begin the four hour maximum holding time.
  • Observed time/temp control for safety foods stored in reach in without proper date marking (milk). Discussed proper date marking with PIC and milk was labeled properly.
  • Observed spray bottles unknown liquid that was not labeled with at least the common name of the contents. Discussed with PIC and spray bottles were labeled properly with the contents during the inspection.
  • Observed several areas around the kitchen as pointed out during the inspection that needed to be cleaned of waste/splash on foods (shelving, sides of grill, sides of cooler). Discussed with PIC that will ensure these areas are cleaned properly.
  • Remarks: Discussed with PIC the need for sushi prep not to include the touching of the cloth on the prep table. Discussed the need to replace the self closures on the restroom doors. Discussed the thawing of the scallops to be in a pan without water.

  • Observed beverages container over a food preparation table. CA: Discussed with PIC. Personal drinks were removed immediately.
  • Observed cooked food items stored directly on top of and below potentially hazardous foods (beef) in the prep cooler.
  • Observed several areas that had waste/splashed foods on them that were in need of being cleaned and sanitized, (inside of microwave, pans of sauce bottles in reach in cooler, milkshake maker in front and back). Discussed with PIC during the inspection.
  • Observed several bottles of sauce and one container of sugar that were not labeled with their common name or any labeling at all. Discussed with PIC who instructed to properly mark all food containers not in their original packaging.
  • Observed several areas throughout the kitchen, storage areas and coolers that had accumulated waste and food debris that needed to be cleaned. Discussed each of these areas with the PIC as we conducted the inspection. She directed employees of the areas that needed to be cleaned.
  • A follow-up inspection will be held on May 4.

WAFFLE HOUSE (West Ave) 1718 (Food Service Inspections)*

  • The PIC could not provide documentation or otherwise satisfactorily demonstrate during the inspection, that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food. CA: PIC must provide documentation stating that employee health policy was covered with each employee.
  • Observed an employee yeti cup in the back kitchen area. CA: Employee cups must be disposable, with a lid and straw. Cup was removed.
  • Observed no paper towels in the women's restroom. CA: Paper towels were then restocked.
  • Observed employee crack eggs, then put toast in toaster without changing gloves and washing hands. Educated employee and hands were re-washed and gloved.
  • Observed employee used cloth to dry previously washed silverware. CA: Employee re-washed silverware.
  • Remarks: Discussed and provided form for the employee health policy.
