• Observed mashed potatoes in the warmer unit that were at 115F. Discussed with PIC to ensure potatoes are heated throughout to at least 165F if reheating before placing in a warmer unit. Potatoes were thoroughly reheated in the oven.
• Observed foods that were in the walk in cooler that were not properly date marked or that had been placed back in the cooler after having been reheated. Discard all foods (if any is left over) after having been reheated once. Foods were discarded.
• Observed standing liquid in the bottom of the reach in cooler. The drain may need to be unclogged. Ensure there is no standing water in the bottom of any cooler.

• Observed containers that held the cooked rice that were dirty and that had been melted in some areas making the containers hard to properly clean and sanitize. Any containers that are not smooth and easily cleanable need to be discarded and replaced.
• Observed growth inside the ice machine that needs to be cleaned and sanitized
• Observed several foods in the walk in cooler that were holding at 44F-45F... Recommend having the walk in cooler serviced immediately... Food Temps should maintain 41F or below.
