  • Observed chlorine sanitizer bucket solution not at proper minimum strength. CA: Sanitizer was replaced after PIC was notified of the issue.
  • Observed chlorine sanitizer in mechanical ware washing not at proper minimum strength. CA: PIC was notified of the issue, and will return on June 29, 2017.
  • Observed encrusted, soiled material on multiple dishes in the kitchen. CA: Dishes were sent to dishes was sent to the 3 comp. sink to be rewashed.
  • Cooked potentially hazardous food (rice mixture) not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. CA: Food was discarded.
  • Observed multiple containers not being air-dried properly. CA; Discussed with pic about proper air drying techniques.
