• PIC could not demonstrate proper cooling technique/procedures when cooling 3 large containers of soup. There is also no thermometer for checking temps. CA: Discussed procedures with PIC and will send informational sheets back.
• Observed knives and peelers with old food debris. CA: Notified PIC of situation and utensils were taken to be re-washed.
• Soup being cooled in large containers with no means of monitoring or procedures to insure proper temperatures are reached. CA: Discussed cooling procedure/methods with PIC and will email informational sheets.
• No thermometer provided to measure temperature of food product. CA: Discussed that a thermometer is required.
• Drinking glasses being stored without air-drying. CA: Discussed drying methods with PIC.

• Observed several areas that had waste/splashed foods on them that were in need of being cleaned and sanitized. Discussed with PIC during the inspection.
• Observed sausage, liquid eggs and butter in a reach in cooler at 46-50F. Items were to be discarded and unit placed out of service until it is repaired. Corrected On-Site.
• Observed creamers requiring refrigeration being stacked up and stored on top of melted ice. Creamers were at 60F. Items were to be discarded and stored in a cold hold unit. Corrected On-Site.
• Observed coolers that did not have a thermometer present inside to verify ambient air temp of the cooler. Discussed with the PIC.
• Observed the dish machine both inside and out, three compartment sink, drain boards, etc that had excessive waste food debris and splashed foods on them that were in need of being cleaned. Pointed out and discussed with the PIC.
• Observed excessive food waste and debris on the floors and under the equipment that needs to be cleaned. Pointed out and discussed with the PIC.
