Restaurant Inspections: 85, or B, for El Nopal

The Bartow County Environmental Health Department conducted food service inspections Jan. 4-11 at the following establishments:

• Observed PIC demonstrating lack of knowledge of minimum cooking temperatures for certain food items (chicken), and employee health status factors. CA: Discussed with PIC as to why he lacked this important knowledge, and advised refresh his knowledge on cooking temps and employee status.
• As noted in previous inspection observed buildup of slime in the interior of ice machine. CA- Discussed with manager proper cleaning and frequency of cleaning the ice machine.
• Observed no thermometer provided to measure temperature of food product. CA: Discussed with PIC about having thermometer provided and using it to check temperatures of food items.
• Equipment and utensils not properly air-dried. CA: discussed with manager about air drying thoroughly before stacking.
• Remarks: Had a thorough discussion with PIC about concern with lack of knowledge about certain risk-factors and employee health. What could account for this, is the lack of practice relaying the information to others on a frequent basis. PIC voiced that he would refresh his memory on these things and would be prepared with the knowledge by the next routine inspection.
• Remarks: Also the small reach-in and large walk-in coolers seemed to be holding items at 42 degrees. I did observe frequent opening and closing of those cooler doors. However, to ensure that the equipment isn't malfunctioning, I advised the PIC to put a bottle filled with water in the back of each fridge. I will come in and take a temperature of it in a few days.
