  • Observed potentially hazardous food cold held at greater than 41°F. (raw bacon at 46°F, cooked eggs at 46°F). CA: PIC removed all items from cooler and placed them inside walk-in cooler since they had been stored less than 4 hours. PIC ordered new cooler. Corrected On-Site. New Violation.
  • Observed employee with painted fingernails longer than tips of fingers actively prepping food in kitchen. CA: Educated PIC on fingernail hygiene. New Violation.

  • Observed no thermometers located in reach-in coolers. CA: Informed PIC that thermometers should be located in all coolers near the warmest part. New Violation.
  • Observed a bucket of wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. CA: Informed PIC and the solution was discarded. Corrected On-Site. New Violation.
