  • Back handsink not working. CA: Discussed with PIC that sink should be operational within 24 hours.
  • Observed food debris on 3 slicers. CA: PIC was notified and told to re-wash.
  • Observed non-restaurant grade insecticide stored in kitchen area. CA: Notified that it was not allowed in kitchen and only food compliant insecticides could be used.

  • Observed potentially hazardous food (shrimp) thawed in standing water. CA: Discussed with PIC about issue and demonstrated how to properly thaw food. Corrected On-Site.
  • Observed in-use utensil not stored on a clean portion of food preparation or cooking equipment. CA: Discussed with about storing in use utensils on a clean surface. Utensils were removed and washed. Corrected On-Site.
  • Observed dishes being stacked wet. PIC was notified and then begin to stack dishes to allow air to circulate through them.
  • Observed accumulation of debris on. Discussed with PIC about the cleaning under and on the side of the cooking equipment.

  • Observed potentially hazardous foods in the walk in cooler that were holding above the maximum cold holding temperature of 41F (Pork 46F, Beans 46F, Chicken 44F). Foods were to be discarded. Corrected On-Site.
  • Observed rice on the steam table holding at 119F. Discussed with PIC... Corrected On-Site.
  • Observed chicken cooling at room temperature. Chicken was still at 87F after nearly 2 hours. Chicken was immediately pulled apart and was placed in the walk in to expedite the cooling process. Discussed proper cooling technique with the PIC. Corrected On-Site.
  • A thermometer was not present in the walk in cooler to verify proper temperatures. A thermometer was obtained and placed in the cooler during the inspection. Corrected On-Site.
