• Observed wet-stacking on multiple clean dishes. PIC was notified of the issue, and voiced that the issue would be corrected.

• As discussed, observed employee with bare hand contact with ready to eat foods. Ensure all employees understand there cannot be any bare hand contact with any ready to eat foods.
• Observed several personal drinks located on food prep and food storage areas. As discussed, personal drinks should not be stored on or above food prep/storage or clean dish areas. Drinks were discarded.
• Observed dish machine connection leaking water into the floor. Have repaired or replaced asap.
• As discussed, the area between the main kitchen and the coolers must be properly sealed off, resurfaced and maintained clean if dry foods and single service plates, utensils, etc. are to be stored there. As discussed, this area will need to be completed by the end of March -- 90 days.
