The Bartow County Environmental Health Department conducted food service inspections March 1-8 at the following establishments:

• Ground chicken was in the same warmer oven that was being used as a "Hot Hold" unit according to the PIC. The temperature was only 94F and the PIC stated the ground chicken was being reheated. Discussed proper reheating of meat products to 165F prior to placing in a hot holding unit. Chicken was moved to another oven to be heated rapidly and properly.
• Observed several potentially hazardous foods in the walk in cooler that were being held above the 41 F maximum cold holding temperatures. Deli Chicken - 43, Ham - 44, Foods were to be pulled and discarded. Discussed with PIC in the walk in cooler. Walk in cooler must be serviced to ensure proper temperature control is being maintained. A temporary cooler or refrigerated truck will be brought in until the cooler can be repaired or replaced.

• Observed bare hand contact of ready-to-eat (biscuits) food by employees and establishment has no approved Alternative Operating Procedure in effect. CA: Employees and PIC was notified of the issue, employees washed their hands and biscuits were thrown away. Corrected On-Site.
• Observed open containers of tea found on table in the front food service area uncovered and subject to contamination. CA: Discussed with PIC about the issue and suggested the containers be cover with a lid or plastic wrap when not in use. Corrected On-Site.

• As noted on previous inspection, observed potentially hazardous food (beef) thawed in an improper manner. CA: Discussed proper thawing procedures.
• Discussed temperature logs to help prevent unobserved cooler failures in the future. Explained the risks of failing coolers, improper thawing and improper temperatures.
