- Hand wash sink not accessible for employee use at all times due to being obstructed by garbage cans. CA: Items were removed from in front of the sink.
- Observed improper vertical separation of raw animal foods and ready-to-eat foods in samm front reach in. CA: Discussed with PIC and items were rearranged.
- Discussed Body fluid clean up kit and employee health policy.
Tarascos (Food Service Inspections)*

- Person in charge lacks awareness in key areas of risk factor control or good retail practices for establishment / CA: Persons in charge, managers or CFSM must be properly trained or retrained.
- No consistent date marking procedure, house made salsa was not date marked. CA: Discussed with PIC about date marking all items in coolers including house made salsa.
- Thermometer not accurate within +/- 2 degrees Fahrenheit. CA: Thermometers must be replaced.
- Observed temperature of cooked shredded chicken at 120 degrees, it was being cooled. The thermometer being used by the facility was registering at 140 degrees Fahrenheit. The PIC was asked to calibrate the thermometer, but PIC had no knowledge of how to do so. I trained him on site on how to calibrate, in ice water, two of their thermometers used to measure food temperatures and it registered at 40-41 degrees Fahrenheit. Cooling violation was not observed, but thermometers were inaccurate.
