• Remarks: discussed having maintenance done on cooler to keep foods cold throughout service. Discussed maintaining proper labels and storing all food closed. Sanitizer uses and cleaning procedures.

Discussed cleaning procedures and personal hygiene; told to wear gloves and use utensils for all ready to eat items. Manager mentioned renovations to building happening soon to create easier cleaning and replace old equipment.

• Observed employee eating a cup of oatmeal while preparing food. PIC was notified about the issue.
• Observed soil build up on ice bin door. Also, observed food debris in containers where clean utensils were being stored, and observed food stuck on slicers (mandolin). PIC was notified of the issue who then voiced that the bins would be cleaned.
• PIC was asked about procedure of washing vegetables, some of which are ready to eat foods, and thawing raw animal foods as it pertains to sink designations. PIC then explained that they used a prep sink and three compartment sink to both wash vegetables and thaw and wash raw animal foods. Designating the prep sink for washing vegetables only, and proper procedures for thawing raw animal product were discussed with the PIC. Also, it was stressed to immediately (change) their existing procedures for washing vegetables and thawing raw animal foods.
• Observed the stacking of wet containers and other clean dishes. PIC was notified of the issue and discussed the proper procedures for air-drying containers.
• Observed vents soiled with accumulated grease and dust. Observed grease accumulated under and behind cooking equipment. Observed grease accumulated under cooking equipment. PIC was notified of the issue, and voiced that the equipment would be clean.
• Remarks: It was stressed to PIC the immediate need to change the procedures for thawing and washing vegetables, and designating prep sink just for vegetables.
