Restaurant Inspections: Dead Insects, Mold Buildup

The Bartow County Environmental Health Department conducted food service inspections May 16-23 at the following establishments:

• It is noted that management and staff have been previously trained to verify accuracy of thermometers and to ensure thermometers stay calibrated throughout their use. During the inspection, it was found the thermometer was not accurate and management wasn't sure how to properly calibrate the thermometer in an ice water bath. Management was shown the proper way to calibrate thermometers via the ice water bath method.
• As noted previously, observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit (See temps above) in the reach in cooler next to the fryers (raw chicken pieces, scallops, fish, breaded chicken breasts, turkey and ham. CA: Discussed with PIC, food was discarded.
• Observed pizza prep top holding potentially hazardous foods at a temp greater than 41F (See temps above). Ground beef, chopped ham, Italian sausage at 44F-46F. Foods were all discarded.
• Observed meatballs and sauce in warmer pot next to prep table that were at 123F. Meatballs were discarded. The other pot of meatballs were at proper temperature.
• Remarks: the foods out of temperature were discarded. The cooler next to the fryer will not be used until it is capable of holding proper temperatures even during the day. The problem appears to be its location next to the fryers. Discussed relocation of cooler. Other foods in prep top and meatballs in steam well were also discarded.
• A follow-up inspection will be held on May 25.

• No Certified Food Service Manager for establishment. CA: Informed PIC that a CFSM must be obtained for the facility as soon as possible. Correct by June 21.
• The PIC could not provide documentation or otherwise satisfactorily demonstrate during the inspection, that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food. CA: Provided facility with another employee health policy form.
• Establishment does not have established procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. CA: Notified PIC that facility must have a bodily fluid clean up-kit with procedures in place. Correct by May 25.
• Observed soil build-up on soda dispensing nozzles in drive-thru. CA: Informed PIC and nozzles were removed for cleaning.
• Observed ice scoop in soiled container. CA: PIC removed for cleaning.
• Remarks: Front reach-in cooler is not working, PIC stated that work order was placed.
