  • Observed several utensils that still had waste/stuck on foods on them. CA: These were rewashed once the PIC Was notified of the issue. Corrected On-Site.
  • Observed potentially hazardous (butter and spinach) food cold held at greater than 41 degrees Fahrenheit. Notified PIC and food was discarded. Corrected On-Site.
  • Remarks: Will return in 48 hours to check status of front prep top cold holding unit. Also observed sub-par handwashing of employee and although it was not significant for a violation, PIC was advised to to retrain the employee to make sure he is aware of proper procedure. Will also return within 48 hours to check ice bin.

  • Worker seen handling ready to eat baked potatoes with bare hands when glove or utensil use is required. CA: PIC was notified and baked potatoes were discarded. Corrected On-Site.
  • Person in charge failed to insure proper cooling, by allowing hot corn and warmer rice to be cooled above and below cooling cooked wings. Also management failed to keep proper logs to ensure cooling temperatures. CA: Discussed with PIC about ensuring cooling techniques. Wings were discarded.
  • Observed utensils not properly air-dried. CA: PIC was notified on how to air dry dishes. Corrected On-Site.
