  • Observed raw foods stored over non cook foods such as cheese in the walk in cooler. All fresh/non cook foods must be stored above any raw meat products or physically separated.
  • Observed wiping cloths stored in sanitizer bucket of water but no sanitizer was detectable in the water. Sanitizer was added during the inspection.

  • Observed several employees preparing ready to eat food without wearing gloves. Gloves were put on as soon as the inspector walked into the kitchen...some without washing hands first.
  • Several personal drinks all over the prep area and some directly beside ready to eat foods being cut up on the cutting board. Personal drinks were all relocated or discarded immediately upon seeing the inspector enter the kitchen.
  • Observed food debris stuck on and around the slicer that was in need of cleaning and sanitizing.
  • Observed splashed on/waste foods on the inside of the microwave that needs to be cleaned and sanitized.
  • Observed several food items in the reach in cooler that were past their use by date printed on the label. These foods were discarded by the PIC.
  • Observed milk in the reach in prep cooler that was six days past its use by date. Milk was discarded.
  • Observed “sanitizing solution” in the three compartment sink that should have had sanitizer in it according to the employee. Concentration had not been verified and was found that no sanitizer was being dispensed into the sink from the automatic dispenser.
