• Observed employee drinks not stored in single use beverage containers with lid and straw. CA: Discussed with PIC that drinks must be stored in single use containers with lid and straw. Drinks were discarded.
• Observed potentially hazardous foods not stored at 41°F or below (blue cheese dressing: 72°F, ranch dressing: 52°F). CA: Items were rapidly cooled to 41°F or below since they had been stored above 41°F for less than 4 hours.
• Observed potentially hazardous foods not stored at 135°F or higher (cooked chicken tenders: 114°F). CA: PIC discarded chicken tenders.
• Observed wet sanitizer rags on prep counter not stored in sanitizer solution between use. CA: PIC placed rags in sanitizer solution.
• Observed live flies in prep area and live roach on wall behind dish machine. CA: Discussed controlling pests with PIC.

• Observed raw eggs and raw chicken stored touching ready-to-eat foods in cooler at grill area. CA: PIC moved chicken to a different cooler and placed eggs on bottom shelf, away from all RTE foods.
• Observed food contact surfaces of equipment not sanitized before use after cleaning. CA: Discussed wash, rinse, sanitize procedures with PIC. PIC added sanitizer to 3-compartment sink.
• Observed potentially hazardous foods not cold held at 41°F or below (meatloaf: 58°F, mashed potatoes: 55°F, green beans: 55°F, pinto beans :54°F, grits: 51°F, chicken and dumplings: 56°F). CA: All food items were discarded.
• Observed sanitizer bucket stored on prep counter touching two pans of roast beef. A pan was also stored sitting on top of sanitizer bucket. CA: Food containers were moved and pan on top was placed in dish washing area.
• A follow-up inspection will be held June 22.

• Observed potentially hazardous food (BBQ sauce, ranch, garlic aioli sauce, cucumbers, and green onions) cold held at greater than 41 degrees Fahrenheit. CA: Notified PIC and items were discarded.
• Remarks: Discussed bodily fluid clean-up and procedures with manager.
