- Observed food containers and utensils in the hand-wash sink. CA: Informed PIC that hand-sink should be accessible at all times. Discussed with owner and an additional hand-sink will be provided in front service area.
- Observed no paper towels located at hand-washing sink: CA: Informed PIC that hand-wash sink must be properly supplied at all times.
- Observed potentially hazardous food not held at 135 degrees Fahrenheit or above. CA: Informed PIC that facility is not permitted to hold hot food, told to discard.
- Observed no consistent date marking procedure. CA: Informed PIC that food intended to be kept more than 24 hours must be date marked.
- Tamales and corn were not at the proper hot holding temps of 135 degrees Fahrenheit. PIC was told to discard.
- This was a follow-up inspection to the restaurant's previous score of 79, or C.

- PIC was not knowledgeable on basic procedures. CA: CFSM should go over basic knowledge with all employees.
- Observed food-contact surfaces and utensils being washed in a utility sink without being properly sanitized. Informed PIC that a 3 compartment sink should be used in order to properly wash, rinse, and sanitize.
- Observed chemical solution bottles stored next to plates and ready to eat food. CA: Informed PIC that chemicals should be stored in a separate location.
- Stir straws stored in cup without protection. CA: Must be protected (Like in shaker bottle).
