- Observed bare hand contact of ready-to-eat food by employees and establishment has no approved Alternative Operating Procedure in effect. CA: Discussed with PIC about either use gloves or tongs to pick up food. Also food that touched with bare hands was thrown out. Corrected On-Site.
- Observed raw chicken being held at a temperature of 56 degrees. CA: PIC was notified, and advised to throw out food. Corrected On-Site.
- Observed cold holding equipment (large reach in fridge) incapable of maintaining potentially hazardous food at proper temperatures. CA: Food was thrown out and PIC advised me that a repair man was on the way to fix the problem. Corrected On-Site.
- Observed no copy of latest inspection report displayed for customers viewing. CA: PIC was advised to post most recent report inspection report. Corrected On-Site.
- Observed accumulation of debris on in-between equipment. CA: Discussed with PIC about cleaning frequencies. Corrected On-Site.
