Restaurant Inspections: Roaches, Expired Ham, Slime Buildup

The Bartow County Environmental Health Department conducted food service inspections Jan. 25 through Feb. 1 at the following establishments:

ARBY'S (Hwy 20) (Food Service Inspections)

  • Observed no paper towels located at hand washing sink. CA: Discussed with the PIC about always having paper towels. Paper towels were replaced.
  • Observed old food stuck to clean dishware/utensils. CA: Discussed with PIC about ensuring that dishes are clean thoroughly and are not beaning stored as clean dishes. PIC took dishes to the 3 compartment sink to be washed.
  • Observed boxes being stored 6 inches off ground. CA: Discussed with PIC about storing items 6 inches off the ground. Box was then moved off the ground.
  • Observed keys sitting on prep counter. CA: PIC was notified of the issue and the keys and phone were removed.

  • Unapproved cooking equipment (including toasters, toaster ovens, stoves, hot plates, crockpots and griddles) found in several rooms. CA: Operator given 24 hours to remove all unapproved cooking equipment from rooms: 326, 236, 234, 229, 227, 123 and 306.
  • As noted on previous inspection, observed furniture, carpeting etc that appeared to be dirty, torn and in disrepair.
  • As noted on previous inspection, mattresses excessively torn, stained and/or dirty.
  • As per occupant(s) of a few rooms (326 and 332) services including linen change/laundering not supplied by facility.

  • Observed several areas of food contact surfaces that were in need of cleaning and sanitizing including: prep tables, grill area, bulk food containers, soft drink nozzles. Discussed with the PIC.
  • Observed reach in coolers and the walk in cooler not holding proper temperature. Discussed with PIC to use alternative cooling methods until the equipment could be repaired.
  • Observed hot holding equipment not holding proper temperatures of potentially hazardous foods. Discussed with PIC that foods that were within time limits could be properly reheated. The others would need to be discarded.
  • Observed wiping cloth sanitizer solution that was not at proper sanitizing strength. (0ppm Chlorine) New solution was made up during the inspection.
  • Observed the door to the warmer unit near the office has a magnetic door that does not work properly. During the inspection the door was ajar multiple times and appears it needs to be repaired or replaced. This is likely the cause of none of the food inside holding proper temperatures.
  • Observed several areas that were in need of having excessive build up removed and the area cleaned. Areas and equipment included: Exterior of bulk food containers, fryers, shelving, backs and sides of prep tables and ovens, refrigerators, freezers, warmer units, walls, doors, etc. PIC was shown all areas during the inspection.
  • The plastic entry doors to the walk in cooler are in disrepair and in need of being replaced. Discussed with PIC.
  • All hot hold and cold hold equipment should be verified to be holding proper temperatures multiple times a day. It is recommended to keep a log of all temperatures recorded separated by the piece of equipment.

  • Observed cooked, ready to eat ham stored on the same shelf and below in elevation from raw ground beef and pork. Separation was corrected during the inspection. Corrected On-Site.
  • Mechanical dishwasher is not providing chlorine at all to the surface of the dishes. All dishes and utensils washed in the dish machine must be sanitized in the three compartment sink prior to reuse. Dish machine must be repaired immediately.
  • Observed ham stored and dated in a plastic bag that had a discard date of Jan. 19, 2017, eleven days prior to inspection. Ham was discarded during the inspection. Corrected On-Site.
  • Observed light in reach in cooler that is loose and hanging down onto the food. The light should be properly repaired or replaced. Discussed with PIC.
  • It is noted that the reach in cooler is nearly to capacity and, according to employees, having a hard time maintaining proper temperature. Temps inside were at 41F to 42F today but with additional food filling up any empty space for air flow could easily go above the maximum cold holding temperature of 41F. It is highly recommended that employees begin to take a temperature log of food temps within this cooler at least three times a day for the next two weeks to verify the cooler is able to maintain proper temps. It should be considered to add additional cold storage units or to step up to a walk in type cooler.
