  • Based on the excessive temperature of the coolers and the actions or inaction of the person in charge to actively correct the problem immediately, the responsibilities of the PIC were not being met.
  • Observed several cooler units holding potentially hazardous foods above the required maximum holding temperature of 41F or below. The ambient air temperature in the kitchen as 94F-97F. The employees state it has been this way for a while. It appears the coolers cannot maintain food temps of 41F or below due to the ambient air temp. This was discussed with the PIC and shift supervisor. It is recommended to first correct the air conditioning unit for the ambient air then determine if all of the coolers are working properly before placing any potentially hazardous foods back into the coolers. The coolers that were holding at 48F-53F included the prep cooler next to the grill, the walk in cooler and the reach in cooler in the back prep area. There was no indication how long the coolers had been holding foods at 48F-53F and for this reason, it was determined to be in the public's best interest to discard all potentially hazardous foods stored in these three coolers until the problem could be resolved. The thermocouple was verified to be accurate by using an ice bath at the time of inspection and was done so in front of the PIC and the Shift Supervisor. In addition, a thermometer from the facility was verified to be accurate in the same ice bath and the temperatures of the coolers were verified with it prior to any foods being discarded. A list of foods discarded was created by the inspector as well as the shift manager.
  • Observed lasagna on the steam table holding at 124 for over four hours. Discussed with the PIC and the lasagna was discarded.
  • A pan of chicken was cooked earlier in the day and was actively cooling. The first parameter was reached by being below 70F within two hours but the second parameter was not due to the inability of the cooler to drop foods below the 48F. This chicken was discarded.
  • Air conditioning was not working as the ambient air temperature in the front of the kitchen was 94F and in the back it was 97F. Employees were sweating during work and could possibly contaminate food from sweat dripping off of them.
  • Upon finding the air condition not functioning properly and the ambient air temperature in the kitchen up to 97F, as well as the prep cooler, walk in cooler and reach in cooler all having food over ten degrees out of proper temperature, the facility was requested to close their doors. The facility was requested to stay closed until such time the air condition was functioning properly and all of the coolers in use able to maintain potentially hazardous foods at the required temperature of 41F or below. A representative from this facility must contact the health department for an inspection prior to opening up to serve customers.

  • The ice machine has mold growth on it and was in need of cleaning and sanitizing. Discussed with the General Manager. Machine was to be cleaned immediately.
  • Observed cleaning chemicals stored on and above condiments near the front counter and drive thru window. Chemical cleaners were relocated.

  • Chlorine sanitizer was not present during the dish washing cycle. It appears that it may just need to be primed. If needed, multiple checks throughout the day should be completed to ensure chlorine sanitizer is always dispensed to the dishes during the dish machine cycle.
  • Observed prep top unit holding foods at greater than 41F. Discussed with PIC during the inspection. Cooler was to be placed out of service and foods relocated until cooler could be repaired. Recommend keeping a written log on the temperatures of the prep top cooler but also of the walk in cooler in the back. Cold temps must maintain 41F or below at all times..
  • It is noted that several floor tiles are broken and or missing in the kitchen area. The floors should be repaired to provide a smooth surface that does not hold liquid or food debris and can be easily mopped and cleaned.
  • It is noted that the air conditioning system is not working properly causing excessive build up of heat and is also leaking water from the vents. It was discussed with the PIC to avoid all leakage of water with any foods storage, prep or clean dishes. Repairs were to be made later today.
  • It is noted that the facility needs to initiate a control program for the presence of flies in the building.
