• Observed no certified food safety manager for establishment. CA: Informed PIC that there must be at least one certified food service manager for the facility.
• Observed paper towels still in original packaging at hand-sink. CA: Informed PIC that paper towels must be readily accessible at all times after washing hands.
• Observed old food/employee food stored in a reach-in cooler in front service area. CA: Informed PIC that old food must be thrown away and cooler must be cleaned.
• Observed raw shelled eggs stored above ready-to-eat food (pies) in walk in cooler. CA: Informed PIC that raw eggs should not be stored above ready-to-eat foods.
• Observed plates in main kitchen area with accumulated dust and debris on them. CA: Discussed with PIC that if plates are not going to be used then they must cleaned and stored covered.
• Observed slime growth on interior of ice machine. Observed interior of microwave observed with food accumulation. Observed old labels stuck to food containers. CA: PIC said equipment was not being used, if items are kept then they must be routinely cleaned and old labels must be removed.
• Observed a bottle of dressing stored past disposal date. CA: PIC informed me that they did not use items in the dry storage area CA: Informed PIC that expired items/ items that are not being used should be discarded or removed.
• Observed pans of sausage, eggs, and other breakfast foods not cooled using the proper techniques. CA: Discussed adequate cooling methods with PIC, such as venting pans while in the cooling process.
• Observed single-service articles (spoons) improperly stored. CA: Informed PIC that single use unwrapped items should be properly inverted to prevent contamination.
• Observed mold/build-up on surface of walk-in cooler vents. CA: Informed PIC that cooler vents need to be cleaned.
