  • Cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures. Prep top cooler not holding temperature. Discussed with manager having maintenance done asap. Asked for receipt or invoice on work done.
  • Discussed maintaining equipment and checking commercially packaged dates. CA, called maintenance and threw out expired food.

  • Observed expired Food Manager Certification. Discussed with the PIC who voiced that he would notify the manager about obtaining a Food Safety Certification.
  • Worker seen handling and slicing tomatoes, that would be served raw on a salad, with bare hands when glove or utensil use is required. PIC was notified and tomatoes were thrown out. The PIC told employee put on gloves.
  • Observed employee eating while preparing food. PIC was notified, and discussed the need to have a designated area for eating and drinking that is away from food prep area.
  • Observed Wiping cloth not air-dried in a manner to prevent contamination of food equipment, utensils, linens, single-serve and single-use articles. Discussed with PIC the proper way to dry wiping cloths.
