- Observed an employee come in from dumping grease and did not wash hands with soap prior to beginning work in the food prep area. Discussed with him and the PIC. Employee did stop and go wash hands properly.
- Observed two personal drinks on prep tables where foods were being stored and/or prepped. Drinks were relocated. Discussed with PIC.
- Both hand sinks were out of hand soap upon arrival. Discussed with PIC and soap was replaced at both hand sinks during the inspection.
- Observed foods that do not need further cooking stored on top of the boxes of raw meets as well as in close proximity and under other raw meat products. Discussed separation requirements with the PIC. Foods were physically separated during the inspection.
- Observed several food items uncovered in the walk in cooler. Discussed with PIC and foods were attempted to be covered with lids. Discussed further with PIC.
- Dish machine was not providing any sanitizer to the surface of the dishes. Employee was continually washing dishes during the inspection. Discussed with PIC and dishes had to be rewashed and sanitized.
- Observed mold growth in, on and around the ice machine. Pointed out to the PIC. Machine was to be properly cleaned.
- Observed the cast iron cooking pans used as plates that had excessive waste foods on them and stored by the grill to be used rather than having been taken to the dish wash area first for cleaning. When questioned, the cook immediately took them to be washed.
- Observed food attempting to be cooled in large buckets rather than in shallow pans as required. Foods were at 56F even after 24 hours. Discussed with the PIC during the inspection and foods were to be discarded.
- Observed excessive grease build up around and under grill area. Pointed this out to the PIC during the inspection. Areas were to be properly cleaned and sanitized on a regular schedule.
- Condensation in the walk in cooler is dripping onto food items. All condensation must be captured and discharged away from foods. Relocate all foods away from condensate drip. Discussed with PIC.
- A follow-up inspection will be held July 26.
