The White Bull Opening On Decatur Square

The new restaurant and bar will be helmed by the former executive chef at The Optimist and feature exclusively Georgia-sourced food.

DECATUR, GA — The White Bull, a new restaurant from the former executive chef at The Optimist, is opening Monday night on Decatur Square.

Showcasing a menu of seasonal fare made exclusively from Georgia ingredients, The White Bull will serve dinner seven nights a week. It takes its name from literary icon Ernest Hemingway, who referred to the blank page as "the white bull."

Located next to The Brick Store Pub on the square, The White Bull is helmed by Pat Pascarella. Pascarella most recently served as executive chef at The Optmist and as executive chef and owner of Italian restaurant Bar Sugo in Norwalk, Connecticut.

Previously, he cooked in Manhattan at restaurants including Eric Ripert’s Michelin-starred Le Bernardin.

Also leading the restaurant as partner and general manager is Italian-born Gabriele Besozzi. Besozzi has worked at restaurants in London, New York, Miami, Atlanta and all over Italy, including the famed Cantina Bentivoglio in Bologna. Pat Siciliano serves as Partner and Sous Chef, bringing 12 years of restaurant experience to The White Bull and Matt Scott manages the bar program.

The White Bull will feature "elevated yet approachable, farm-forward American fare."

Ingredients are sourced entirely from Georgia farmers and other purveyors, including Finch Creek Farm, Tucker Farms, Riverview Farms, Aluma Farm, Stone Mountain Cattle Co. and Levity Farm.

Guests can expect around 15 seasonal and frequently changing dishes, including vegetable-forward plates and pastas made with single-ingredient whole wheat flour that's stone-ground in-house daily.

Instead of bread service, guests will receive a tasting of the day's select vegetable just in from a Georgia farm.

The White Bull will be open from 5-10 p.m. Monday through Thursday and 5-11 p.m. on Fridays. On weekends, the bar will open at 3 p.m. on both Saturdays and Sundays. Dinner will be served 5-11 p.m. on Saturdays and 5-10 p.m. on Sundays.

There are plans in the works to add brunch service.
