• Observed failure to have handwash sink accessible for employee use at all times. Items stored in hand washing sink. Corrective Action: Items blocking hand sink accessibility were removed. Must only use equipment for designated purpose.
• Observed raw chicken stored above unprepped lettuces in main kitchen walk-in cooler. Corrective Action: Raw chicken was stored above other containers of raw chicken. Education provided on proper food storage in cold holding units.
• Observed cooked shrimp stored on prep rack maintaining 88 degrees F. Item was cooked two hours prior to inspection and meant to be maintained hot. Corrective Action: Item was reheated to 188 degrees F. Education provided on required hot holding temperatures.
• Observed potentially hazardous food thawed at room temperature. Corrective Action: Item was placed in walk-in cooled to continue thawing.
• Observed failure to have an ambient air thermometer in walk-in freezer that is accurate within +/- 3 degrees Fahrenheit. Corrective Action: Must place a working internal thermometer in unit so as to accurately measure air temperature.
• Observed wet wiping cloths not stored in sanitizing solution between uses. Corrective Action: Wiping cloths were stored in chlorine sanitizing solution.
• Observed build up of debris on floors and walls around grill prep area. Corrective Action: All non-food contact surface must remain clean to sight and touch.
• A follow-up inspection will be held Jan. 4, 2018.

Item was corrected onsite.
• Observed wet wiping cloths not stored in sanitizing solution between uses. CA: must store wet wiping cloths in sanitizing solution when not in use.
• Observed wet wiping cloth used to stabilize cutting boards. CA: must use a smooth, sealed, and easily cleanable material.
