Observations: Multiple violations in risk factor categories which were indicative of training needs for some staff members. Bartender sliced lime wedges for customer’s drink using bare hands. He then handled a wedge directly with a bare hand when placing it onto the rim of the customer’s drink. Portions of ready-to-eat chicken were contaminated by the drippings from raw chicken which spilled onto the prep counter. Raw fish was stored directly above pre-cooked pork. Raw sausage and meatballs were stored above roasted garlic. Several pans (1/9 and 1/6 sizes) were still soiled after having been washed and stored as ready-to-use. Multiple pasta sauces, sausage, and meatballs were not cooled to temperatures below 41 F within six total hours of the cooling process. Ineffective cooling method used: Several pans of hot foods from the steam wells were placed into shallow ice baths and rolled into the walk-in cooler. Ice must be filled around the container to the height of the food product inside the container. Ceiling vents over exposed foods on prep stations have accumulations of dust with grease vapors sticking on them. Several floor tiles are missing along the cooking line. Also, cleaning is needed around the floor drains.
