Lemon Juice Key Ingredient in Uncle Bub's BBQ Ribs
Mark Link, owner of Uncle Bub's BBQ in Westmont, Ill., is one of eight vendors at this year's Rockin' Ribfest.
Lake in the Hills Patch interviewed several of the vendors who will be bringing their famous ribs to this year's Rockin' Ribfest, scheduled for July 7 through 10. Here is today's profile.
Mark Link’s trick to making great-tasting ribs is first to pour lemon juice on his baby backs.
“It opens up the pores, and then I let my rub sit on the ribs for eight hours,” said Link, owner of Uncle Bub’s BBQ, whose home restaurant is at 132 South Cass Ave., Westmont.

“I slow cook my ribs with a mix of apple and hickory wood. The hickory gives it a smoked flavor, and the apple has less of a smoked flavor.”
This is the first year Uncle Bub’s BBQ is participating in the Lake in the Hills Rockin’ Ribfest, scheduled for July 7 to 10, at Sunset Park, 5200 Miller Road.

“Years ago, I used to go up to that festival,” Link said. “I do a lot of catering up there, and when I heard there was an opening at the ribfest, I jumped at the chance.”
Link describes Uncle Bub’s ribs as “not too spicy, not too sweet.” His are “all-around ribs” with a Kansas City style.
“We put a slight glaze of our sauce on our ribs,” Link said.
Like many of the other grillers, Link sells his homemade rubs so people can take the secret recipes home and try them out on their own grills. Uncle Bub's offers a Rib Lovin’ rub for ribs, and a Chickin’ Stickin’ rub for pork, turkey and chicken.
As a Chicago-area award winner for ribs and sauce, Uncle Bub’s specializes in catering weddings, corporate and birthday parties, graduations and other special events. Uncle Bub’s also offers pig roasts, barbecue, Hawaiian luau, onsite grilling and traditional banquet menu.
