New Locally Sourced Beer, Coffee Brands to Debut at Beverly Art Walk
Horse Thief Hollow and Hardboiled Coffee Co. partner up to offer new artisan coffee and coffee-nuanced beer.

Horse Thief Hollow Brewing Co. has partnered with Hardboiled Coffee Company by launching a new brand of artisan roasted coffee, Hollow Grounds. The coffee will be roasted daily in small batches in Horse Thief Hollow brewpub located at 10425 S. Western Ave. in Chicago’s historic Beverly neighborhood.
The pub is also brewing up a new beer flavored with ground coffee beans.
Horse Thief Hollow Brewing Co. owner Neil Byers says that Gregg Wilson, owner of Hardboiled Coffee Co. is as passionate as he is when it comes to sourcing locally initiatives.

“We’re extremely proud to announce the new partnership with Hardboiled Coffee Company. Producing artisan roasted coffee fits with our philosophy of handcrafting everything from scratch,” Byers said in a news release. “... Hollow Grounds enables our customers to enjoy the small batches of coffee made locally right in our brewery.”
Inspired by the new coffee flavors, Horse Thief Hollow is introducing a new beer, Hollow Grounds Oatmeal Stout, featuring cold brewed coffee made in house. In addition to the cold brewed coffee, Horse Thief Hollow will be dry hopping the beer with coarse ground coffee beans, adding an additional nuance to the beer.

Horse Thief Hollow has built a reputation for brewing great traditional styles of beer along with creative, chef inspired seasonal beers. Byers and Brewmaster David Williams were awarded twice in 2014 for their beers, first at the World Beer Cup and later at the Great American Beer Festival.
Byers was identified as a fast-growing business owner with strong community and philanthropic connections as he was selected as the 2015 Chicagoland Chamber of Commerce James Tyree Emerging Business Leader.
True to the spirit of his recent honor, Byers kicks off the new beer and coffee brand Saturday, October 3 during the 2nd annual Beverly Art Walk. There will be 40 one-pound bags of coffee with custom unique art on each bag for sale. A percentage of the proceeds will benefit the Beverly Area Arts Alliance.
Horse Thief Hollow opened in February of 2013. The brewpub menu offers an eclectic mix of Southern Gastropub and casual American fare. Horse Thief Hollow is currently planning to expand the brewery and distribute beer throughout the Chicago region in early 2016.
