
Bally’s Chicago is raising the stakes on River North’s culinary scene with the debut of Tre Denari, a new Italian dining concept created in collaboration with the award-winning team at One Off Hospitality. This intimate, 40-seat restaurant will officially open its doors inside Bally’s Chicago casino on September 12th.
Tre Denari reflects the refined yet approachable vision of One Off Hospitality’s Executive Chef, Paul Kahan, a James Beard Award-winning chef celebrated for his work at some of Chicago’s most reputable restaurants including Blackbird, avec, The Publican and Nico Osteria. Known for his passion for seasonality and bold creativity rooted in classical techniques, Kahan serves as the guiding force behind this exclusive project, collaborating closely with Bally’s Chicago’s in-house culinary team who will lead day-to-day operations.
Tre Denari will showcase a menu of Italian classics, guided by Kahan’s signature precision and attention to detail. Rustic pastas include Bucatini Cacio e Pepe, enriched with pecorino and a fragrant three-peppercorn blend, and Rigatoni alla Vodka, finished with a bold, spicy vodka sauce and fresh basil. Entrées feature dishes such as Grilled Ribeye with roasted garlic and herb butter, and Chicken Parmesan made with hand-breaded, naturally raised chicken, Tre Denari marinara crafted from Bianco DiNapoli tomatoes, fresh basil, and topped with fresh mozzarella. Cocktail menu callouts include an Aereo di Carta, with Banhez Mezcal, Aperol, Amaro Nonino, and Lemon; and an Espresso di Notte mixed with Buffalo Trace, Averna Amaro, Espresso, Demerara and Lemon.
The opening of Tre Denari is part of Bally’s Chicago’s broader commitment to elevating the city’s entertainment and hospitality scene. Enhancing the guest experience, the casino also just recently unveiled a custom-built live entertainment stage that appears to float in the center of the gaming floor, offering 360-degree views from all three levels. The stage hosts a live music series with performances from some of Chicago’s most beloved local bands every Thursday, Friday, and Saturday night, further blending the city’s rich cultural and culinary energy under one roof.
