What Do I Do With All My Yellow Squash?

An enormous amount of squash coming, my corn is plugging along and what do I do with my veggies that ripen while I'm on vacation?

Hi everyone! Sorry I missed last week! To say I've been busy is an understatement!

Even though I missed last week, it did not stop my garden from growing! My backyard is almost completely inundated with yellow squash! It is everywhere! Tons of flowers, so I'm anticipating a nice crop. My only problem is (yet again) what do I do with it all? How can I preserve it for wintertime? If anyone has any ideas, please pass them on!

I know I can freeze it, but my experience with that has been soggy squash when it's defrosted! I have cooked it with agave and brown sugar. I have grilled it with garlic powder and balsamic vinegar. I even added it to my cut-up veggies for veggies and dip. Now what? Please help me!

Tomatoes look great, however, my "Big Boys" got so big they snapped the branch off the plant! I mean, you should see how huge these tomatoes are!! Cukes are looking good. Again, lots of flowers but not much fruit yet. And despite Delilah's (my beautiful, fun tuxedo cat) best work, the eggplant(s) look like they're making a go of it! The multi-colored carrots are so pretty and taste so nice ... mmmm! Lad planted some brussel sprouts and it looks like they're coming up. Peppers look good, too.

Now, on to my corn. These storms we have had all summer have completely tested my corn! The winds have, on more than one occasion, bent my stalks over to where they are almost touching the ground. I have been so worried about my corn. I have staked them, talked to them, apologized to them for our nasty weather, and I have even promised them a better location next year! And wouldn't you know? Each stalk has one ear of corn on it and they are thriving. The stalks may be bent over, but the corn is growing! I am so happy! Go corn! Go corn! Woo hoo!!!

We have another dilemma. We are going on vacation for two-and-a-half weeks and I am concerned the veggies that ripen while we are gone will be wasted. I need to find someone to help me "save" these vegetables. We did not anticipate this summer of storms which set our growing season back a bit. :(

All right, next blog I will talk more about a few organic and ecologically sustainable businesses I have run into recently. Again, I am out of town in upstate New York. (Yes, the home of the GREAT Pete's Polar Parlor!)
