Elmhurst Restaurant Wants More Liquor Offerings
It is seeking permission to sell mixed drinks to dine-in customers.
ELMHURST, IL – Bottle Theory, which opened in November at 542 S. Spring Road, is seeking to expand its liquor license.
The business, which is also a beverage retail store and taproom, now has Elmhurst's permission to sell beer, wine and alcoholic seltzers. This is for both retail packaging and dine-in guests.
In a letter to the city, Bottle Theory's managing partner, Eric Farrell, said the restaurant wants to expand its menu and sell spirits, mixed drinks, craft cocktails and other packaged alcoholic beverages on site.

"Since we've opened, we've been nothing short of wowed by the incredible welcome we've received from the city and community alike," he said. "Enhancing our menu with craft cocktails and mixed drinks was always just a matter of time for us, as our founding team has a wealth of industry experience building and operating craft cocktail programs."
Farrell said the menu is taqueria-inspired, with Mexican dishes such as tacos, quesadillas and burritos. It also features a "smashburger."

On Monday, the City Council's Public Safety Committee plans to take up the request.
