Authentic Regional Mexican Cuisine Debuting on 95th Street

La Cosina Jalisciense taking over former Zaca's space in Evergreen Park.

A new restaurant is in the works at the former Zaca’s at 3220 W. 95th St. in Evergreen Park.

La Cosina Jalisciense plans to serve authentic “comida jalisciense” or “food of the Jalisco state” from the Guadalajara region in Mexico, as well as American cuisine.

Restaurant-veteran Maria Suastev brings more than 20 years’ experience in the restaurant business. La Cosina is her first venture as a restaurant owner.

“Everything will be made from scratch as it is ordered,” Suastev said.

La Cosina will offer such signature dishes of the Jalisco state as tortas ahogadas, which are “drowned sandwiches” made with a French roll and stuffed with pork and drenched in spicy salsa.

Other dishes include Huarache, a corn tortilla shaped like it’s namesake sandal and smothered with a variety of toppings, including green or red salsa, onions, potato, cilantro, meats and cheese.

For breakfast, Diners can drop by in the morning for spicy omelets, Mexican chorizo and American breakfast sandwiches. Shakes and smoothies will be served around the clock.

Prices range from $1.75 for single food items, like corn tacos, to $13 for steak, rice, beans and salad.

The restaurant had its business application approved by the Evergreen Park Village Board last month. Suaves hopes to be open the doors before the end of August.

La Cosina Jalisciense will be open for breakfast, lunch and dinner, from  8 a.m. to 10 p.m. daily. The restaurant is located at 3220 W. 95th St.
