Rhubarb and Strawberries are a Great Combination
Baking a fresh strawberry rhubarb pie.

It's not often that I have the time or desire to make a pie. However, when my dad brought me fresh cut rhubarb from his house the other weekend, pie was the only thing I could think of. I love a good rhubarb pie but even better than just plain rhubarb is a yummy strawberry rhubarb pie. When I saw the big juicy red strawberries in the grocery store the other day, I just couldn't resist.
Then as if the stars magically aligned, I had found the time to make the pie. It took twice as long as I had originally anticipated cutting up all of the rhubarb and strawberries. I ended up with enough to make two pies with a few extra strawberries to snack on while the pie was baking.
The whole house smelled wonderful as the pie was baking which was in part due to the fact that I remembered to place tinfoil below the pie to catch any potential drippings from the pie. Between the delicious aroma, the extra strawberries to snack on and the Cubs Win over the Sox, it was a wonderful night.

We let the pie cool that night and tasted it the next day. I must say that it tasted even better then it smelled the night before while baking. I would invite you over for a slice but I am afraid that there isn’t enough left to share with everyone. I’ll have to let you know when I receive my next batch of fresh rhubarb and have the urge to bake a pie again.
