Grayslake Gets On Board With Goose Island Restaurant-Bar in Downtown Area
Two local business owners are looking to open the new restaurant in a building that covers 250 and 266 Center Street.

GRAYSLAKE, IL - Two local business owners are looking to bring a restaurant-bar, possibly under the Goose Island Beer Co. banner, to downtown Grayslake. And on Tuesday night, Grayslake Village Board trustees voted 7-0 in favor of a tentative $350,000 incentive agreement meant to benefit Mark Khayat and Pete Giannakakis, who plan to open the establishment in a building they bought on Center Street, according to the Daily Herald.
The agreement still needs to receive formal approval from the village board.
Khayat, who owns Austin's Saloon and Eatery in Libertyville, and his son-in-law, Giannakakis, who owns Anastasia's Restaurant and Sports Lounge operations in Antioch and Waukegan, are aiming to open the new restaurant-bar by January, according to a Monday article on the Daily Herald website. The hope is to open with the Goose Island brand or to run the establishment as an independent farm-to-table restaurant. The proposed 233-seat restaurant would span two levels.

The incentive package would require the owners to make improvements to the buildings, while still preserving the historical structure, and the village is expected to break even on the investment after five years through a combination of annual sales and property taxes generated by the business, according to the article.
