Aguamiel Expected to Open in Clarendon Hills This Fall

Clarendon Hills residents can expect downtown's new Mexican restaurant, Aguamiel, to open the first week of October, after the arrival of key kitchen items made in Mexico. 

Sylvia Jimenez, whose family owns Aguamiel and several other restaurants in the western suburbs including Santa Fe in Glen Ellyn and Il Sogno in Wheaton, said the wood-burning grill is among the items that still need to arrive. 

"Everything that we’re going to make is going to be with the wood-burning grill," Jimenez said. "We’re doing it the real way. No gas; no charcoal." 

She said the items might come in as early as next week.

, Aguamiel's owners have hired two chefs who have worked under well-known Chicago chef and restaurateur Rick Bayless.

Enrique Gomez, who worked for 19 years at Frontera Grill, will be Aguamiel's executive chef, Jimenez said. Mark Segura, who has worked at Topolobampo and Frontera for a combined 21 years, will be on staff, as well.

"We are as authentic is it gets," Jimenez said. "We know it’s going to be well accepted."

Next door to Aguamiel is another to-be-opened Clarendon Hills restaurant, Lindy's. Village manager Randy Recklaus said he expects Lindy's will open in the coming months, but could not provide a specific opening date.

Patch has reached out to Lindy's ownership for more information, but calls and emails have not been returned.
