The Preservation Kitchen Captures Season in a Jar

The La Grange Public Library will host a book signing and demo with Paul Virant on June 7 at 7:00pm. The Preservation Kitchen, released in April 2012, is Virant’s first cookbook, and the first canning manual and cookbook authored by a Michelin-starred chef and restaurant owner.

Virant uses his expert knowledge to provide detailed guidelines on canning, pickling and storing alongside recipes in the first half of the book. The second half focus on pairing those sweet and savory preserves with everything from salads, cocktails and meats to evoke reminders of seasons past.

As the owner and chef at Vie Restaurant in Western Springs, IL, Virant has delighted his patrons with award-winning seasonal menus that use his preserving techniques.
