Time for another one of my Vietnamese Americana Thursday Mealshares!
I never really appreciated the food I grew up with until, like an overzealous but ultimately dimwitted bird, I spread my wings and flew the coup. Rather, I flapped my wings hard enough that I just toppled over and down to the cold world below... Oh how naïve I was.
For this meal I'll be cooking my mom's recipe for Thit Kho, which is caramelized braised pork belly and eggs served on a bed of steamed rice. Although it's more obscure than the popular Vietnamese dishes you might see on a menu, this dish is no less filled with the rich flavors that exemplify Vietnamese cuisine. Sweet, savory, tangy and DElicious.
