Roasted Delicata Squash with Thyme

Cooking healthy from a Diabetic trying to get healthy

Hello my name is Aletha. I am a diabetic and I am trying to get healthy and get off insulin, so I am trying to cook healthy meals for me and my husband.

We had a vegetable garden this year and I also do organic. My garden is (organic), and I try to buy almost all organic. It costs more, but I think it is important to get away from the processed foods in our lives. I am trying. Yes, I do like some processed foods but I am trying to break away from them, slow but sure. 

This is one recipe that I have made and I am sharing it. It is so good! This squash is in for a short time - it tastes like sweet potato and it is yummy. So if you come across one, do buy it, because come November before Thanksgiving, it will be gone.  I buy mine at Whole Foods.

Roasted Delicata Squash with Thyme

  • Halve the squash lengthwise and remove the seeds.
  • Cut each piece in half again. '
  • Drizzle the squash with olive oil. 
  • Sprinkle with a generous pinch of salt and sugar. 
  • Top with cracked pepper and fresh thyme sprigs. 

Bake at 425º for 30 minutes. 

These will hold well in a warm oven if they finish before you are ready to serve them. If they look dry, you can “refresh” them with a little drizzle of olive oil. Plate them with the roasted thyme sprigs and it’ll look fancy!
