Impossible Berry Pie

Just because you are a Diabetic does not mean you can not have a dessert.  This one is easy and really good,really it is.  Most people think you can not eat this or that so untrue we as Diabetics can eat everything we just have to  do more portion size and watch our carbs.  I have made this recipe and my family loved it and if you do not tell people that it is a Diabetic dessert, they wont know, really.

Impossible Berry Pie

1 tbsp  powdered sugar 
1 each  cooking spray
 1 cup  fresh sliced strawberries
1/2 cup  fresh raspberries 
1/2 cup  fresh blueberries 
13 floz  Milk, evaporated 
1/4 cup  agave nectar, all natural 
1/4 cup  whole wheat flour
 1/4 cup  white all purpose flour 
1 tsp  vanilla extract 
4 each  eggs 
1/4 cup  canola oil 
1/4 tsp  almond extract 
1/3 cup  flaked unsweetened coconut 

Preheat oven to 350°F.
Coat 9-1/2" pie plate with cooking spray.Place berries in pie plate; set aside.Shake evaporated milk and pour into food processor or blender. Add agave nectar, flours, vanilla, eggs, oil, and almond extract. Process until smooth, scraping sides.If using, add coconut and pulse 2 times.Pour mixture over fruit and bake 45 to 55 minutes or until golden brown and knife inserted in center comes out clean. .Cool on rack about 30 minutes and refrigerate about 1 hour before serving.Dust with powdered sugar, if desired. Cover and refrigerate leftovers
