Lockwood Restaurant & Bar Announces Next Installment of the Uncasked & Paired Series Featuring The Macallan Label, April 28
Lockwood thrilled to announce the next installment of its Uncasked & Paired Series
Lockwood Restaurant & Bar, located within The Palmer House, A Hilton Hotel, 17 E. Monroe Street, is thrilled to announce the next installment of its Uncasked & Paired Series on Thursday, April 28 at 6 p.m., featuring fine scotches from The Macallan label paired with a three-course dinner from Chef Mat Wiltzius. On hand to expertly discuss the rich flavors, textures and history behind each scotch and the reason for its pairings is Jillian L. Farrell, brand ambassador for The Edrington Group from which Macallan hails. The dinner is $75 per person and reservations can be made by calling 312.917.3404 or on the website, lockwoodrestaurant.com.
Preceding dinner will be a brief cocktail hour featuring cocktails made with The Macallan 12 Year Old Traditional, exclusively aged for a minimum of 12 years in the rare sherry-seasoned Spanish oak casks of Jerez, Spain and exudes a beautiful, rich gold hue as well as an exquisite flavor profile.

Second Course
The Macallan Rare Cask: created as an ode to beautiful natural color and complexity of flavor that The Macallan is known for, Rare Cask is crafted using liquid aged in first-fill Spanish sherry-seasoned oak casks.
Herb and Hard Spice Smoked Sirloin: béarnaise marshmallow, charred spring onion, raisin crumble and sauce soubise
Third Course
The Macallan 10 Year Fine Oak: a great introduction to the Fine Oak range and an excellent expression whether you are new to the malt or you are a seasoned aficionado.

About Jillian L. Farrell
In early 2013, The Edrington Group was proud to appoint Jillian Farrell as a brand ambassador, representing their Rum and Scotch Whiskey portfolio. She was immediately immersed with extensive brand training in Scotland at The Edrington Group distilleries, as well as the Dominican Republic where Brugal Rum originates. Since then she has worked in the infamous mixology community in Chicago sharing her teachings of the portfolio.
Farrell has been in the wine & spirits industry for more than 10 years studying under highly respected professionals in the field. She has received several certifications for her knowledge as well as for public speaking. She has worked in all facets of the industry from distributer, marketing and supplier sides of the business. Farrell brings a unique perspective to the position and relishes in making learning enjoyable for all.
Her responsibilities include promoting the heritage and craftsmanship of The Edrington Group’s brands, showcasing her expertise and knowledge and spreading the word of these award-winning brands glass by glass.
