Health Inspection Report: Schmaltz Delicatessen

NAPERVILLE, IL — You might love the food, but sometimes the restaurants you visit aren’t always the cleanest places. And sometimes they are. You can know for sure with a health inspection report.

The DuPage County Health Department visited Schmaltz Delicatessen Oct. 19 for a routine inspection.

Below are notes from the health department on items out of compliance from the visit.

  • Temped tomatoes at 46 degrees F inside reach in cooler at bagel prep station. Potentially hazardous food must be held at 41 degrees F or lower.
  • Temped coleslaw at 46 degrees F inside reach in cooler at prep line. Potentially hazardous food must be held at 41 degrees F or lower. Discussed with manager.
  • Temped turkey lunch meat at 50 degrees inside cold hold unit. Potentially hazardous foods must be held at a temperature of 41 degrees F or lower.
  • Temped tuna salad at 60 degrees F inside walk in cooler. Potentially hazardous food must be held at 41 degrees F or lower.
  • Observed an employee drinking beverage with gloves on, and then began to prep food with same gloves on. Employees must wash hands for a minimum of 20 seconds, with warm continuous running water, between the changing of every task.
  • Onions on floor inside walk in cooler. Food products must be placed on approved shelving to keep food at least 6 inches above the ground.
  • Observed a knife soaking in sanitizer water. Knives must be stored in a designated container, or clean and dry on a clean surface.

The restaurant received a demerit score of 29. Demerit scores start at zero and increase as violations are observed. This is the sum of the weight (Wt) of each item marked.
