New to the Chicago food scene in 2021, owner George Bumbaris started doing take-out only in extremely limited quantities. Why not make more, people asked? For the same reason that made the pizzas so popular in the first place--the incredibly delicious crust that must rise for two days before it's made into a pie. Add on your own toppings--or pick from the specialty flavors with names as fun as the pizza is mouthwatering. We like Clooney's ER--cup + char pepperoni pairs perfectly with Italian sausage, beef meatballs, and bacon. Don't worry, veggie pizzas aren't an afterthought though. We also recommend McFly's Sci-Fi with goat cheese, baby spinach, grape tomatoes, castelvetrano olives, and roasted garlic.
