OAK LAWN, IL — One of Oak Lawn’s most popular restaurants is planning to expand. Tom Democopulos, owner of STACKED Pancake House, is planning to add 2,600 square feet to his inventive breakfast and lunch eatery.

Democopulos tells Patch that he just finished negotiating a lease with the owner of the building. The current 2,300-square-feet STACKED seats 70. Democopulos plans to knock down the wall into the former Eva’s Bridals space, increasing the seating capacity to 120.

“We’re in the process of getting building permits,” Democopulos said.

In addition to expanding the physical space, Democopulos has been approved for a liquor license and plans to add mimosas and bloody Marys to his menu. STACKED will also add video gaming to a sectioned-off area of the restaurant.

STACKED was an instant hit when it opened in 2011, with lines snaking out the door on Saturday and Sunday mornings. STACKED offers a variety of omelets, scramblers, french toast, blintzes and pancakes, including non-gluten options. Lunch fare includes burgers, sandwiches, soups and salads. Democopulos expanded his STACKED brand last year, opening a second location at 14306 S. Cicero Ave. in Crestwood.

STACKED is open daily at both locations, from 9 a.m. to 3 p.m. Democopulos is aiming for a re-grand opening in Oak Lawn this fall.
