
Wing Boss (thewingboss.com), an independent quick casual restaurant specializing in chicken wings, opened its newest location in Berwyn at 6625 W Roosevelt Road. The restaurant uses their simple mission – “Wings Done Right” – to produce a flavorful menu of regular and boneless wings, sides and beverages. Wing Boss celebrated a Grand Opening with the Berwyn Development Corporation (BDC) on June 6.
Michael Pace was in the full service restaurant business for over twenty years, including LaBella and the Avenue Ale House in Oak Park, and has since branched into the quick casual market. Wing Boss offers wings that are larger than the typical wing franchise, which tends to produce more succulent chicken. What’s more, all of their sauces are homemade and were created specifically for the restaurant. Wing Boss is open every day until midnight and also offers delivery. Wing connoisseurs can indulge in a cascade of nine Wing Boss flavors with a promise of made-to-order crispiness as the wings are never precooked. Michael & Diane Pace, founders of Wing Boss, wanted to provide the Berwyn market with a high quality offering of one of the most popular finger foods of our time. Michael Pace remarked, “Wings are a staple of sports get-togethers, party hors d'oeuvres tables and can stand as an unmatched taste sensation for those with a case of the late night munchies. Wings can be made to please any crowd, prepared spicy, mild, salty or sweet and leveled off with a variety of dips from bleu cheese to honey mustard.”
Through the support of the City of Berwyn and the BDC, Mr. & Mrs. Pace received Tax Increment Financing (TIF) for the redevelopment of the vacant 1,250 square foot space for their new restaurant. Mr. Pace continued, “The process of working with the city from construction to licensing was a smooth one and without the financial assistance from the BDC, this would not have been possible. We are looking forward to doing business in Berwyn for a long time.” Mayor Robert J. Lovero stated, “I have been trying to lure Michael into the city for quite some time. It is a pleasure to finally welcome him at his fine establishment, which looks terrific. Wing Boss is a great addition not only to the plaza but also to the City of Berwyn. With all of the great redevelopment taking place, Roosevelt Road has truly grown up.” Jon Fey, BDC Board President, added, “The opening of Wing Boss is another step in the continuing growth and revitalization of Berwyn’s Roosevelt Road corridor.
