PLAINFIELD, IL — Sovereign, a downtown Plainfield favorite, will close its doors for three days beginning June 19 while undergoing kitchen renovations, officials announced.

The kitchen overhaul coincides with the restaurant's plan to launch a new menu that incorporates "fresh, responsibly sourced ingredients with innovative techniques to create a unique fusion of flavors."

The restaurant, located at 24216 Lockport St., will be closed through June 21 and plans to reopen the following day, when a grand reopening event is planned.

"We are immensely proud of our evolution and cannot wait for you to experience this version of Sovereign," officials said.

First opened in 2014, Sovereign specializes in "a diverse selection of dishes that cater to a wide variety of tastes and dietary preferences." The menu offers salads, sandwiches, meat-focused dishes and several chicken plates — the beloved Wiccan Chicken being among them.

"Our goal was always to provide a 'city dining' experience without the hassle of the city," staff said. "The small towns deserve good food, exceptional libations, and quality service just as much as the big cities do."

Staff is calling the new menu Sovereign's "third iteration." The second came in 2019 when the restaurant packed up its original location at 24205 W. Lockport St. and move across the street into The Sanctuary, a property then under development by parent company Minor Threat Restaurant Group.

The new version of the eatery comes as a new chef, Jeremy Pyrzynski, joined the team in May. Staff said he has "worked tirelessly" to reimagine the menu ahead of the grand reopening.

Pyrzynski previously worked at Chicago restaurants, including Boka and The Publican.

"Mutual interest brought us together, and the instant connection of passion, personality, and work ethic was obvious," the restaurant said in its announcement. "We unanimously agreed: it's go time."
