Alcohol Permit Approved for Romeoville Microbrewery

The business should open in late fall or early winter.

Romeoville trustees recently approved a special use permit for alcohol sales for Metal Monkey Brewing, a new microbrewery that will be opening soon in Romeoville.

The Chicago Tribune reports that the liquor license will allow brewery workers to pour three pints of beer for each customer. The business should be open sometime in late fall or early winter.

Brett Smith and Dan Camp are the co-owners of Metal Monkey Brewing, which will be located at 515 Anderson Drive.

“We’re going to have a small tasting room and brewing everything on-site,” Smith said in a July article. “It’s going to be our beer and our beer only.”

However, the brewery won’t also be a restaurant. In lieu of that, Camp and Smith plan on having food trucks. People are also encouraged to bring their own food.

Smith and Camp have been perfecting their beer recipes for several years. One of their more popular brews is Simian Fever, which is a hibiscus wheat beer.

“It’s a nice, lighter beer but it’s got a bit of tartness from the hibiscus flowers that we use in it,” Camp said. “It sells out pretty quickly.”
