3,000 Pounds of Corned Beef Barrel-Cured at Casey's

If you're on the hunt for corned beef this St. Patrick's Day weekend, Casey's Market in Western Springs has a ton of it. Manager Joe Lane said they'll have made about 3,000 pounds of it.
Casey's uses a four-week process to slow-cure the meat in barrels, giving it a flavor Lane said his grandfather used at his store in Villa Park dating back 40 years.Β
"That way you get the best, freshest corned beef you can have," he said.Β
